Preparation
Preheat oven to 400°F (200°C).
Trim the beets and place in a baking dish.
Cover tightly with aluminum foil and bake until a fork easily pierces through beets, about 1 hour.
Rest beets until cool enough to handle.
Use a paring knife to peel away the skins.
Cut into bite sized pieces and place in a medium bowl.
Whisk together the PURE cranberries and maple, olive oil, balsamic vinegar and coriander. Season with salt and pepper.
Pour the dressing over the beets and toss to evenly coat.
To serve, portion beets onto plates and top with orange pieces and feta cheese.
