In a bowl, mix mayonnaise, applesauce and parsley together. Set aside. Using your fingers, remove soft inner part of baguette sections. Using a spoon (or spoon handle if hole is too small), baste inside of baguette sections with mayonnaise mixture. Stuff pieces of baguette with shaved pork. Stand stuffed baguette sections up in a plate and fill holes with alfalfa sprouts.
