Heat oil in a pot and sauté onion. Add garlic, zucchini, eggplant, mushrooms and tomatoes. Cook over medium heat until tender, about 20 minutes. Add soybeans and reduce heat to low. In a bowl, combine miso, water and Italian seasoning. Stir into vegetables.. Serve and enjoy.
