Melt the butter and stir-fry the garlic and onion for 2 to 3 minutes. Salt and pepper. Add the carrots, parsley and chicken broth. Bring to a boil, cover and cook over low heat until the carrots are tender, for about 20 minutes. Add the white beans and milk. Pour into a mixer and purée. Return the mixture to a saucepan and add the spinach. Continue cooking for 3 to 4 minutes.
