Preheat oven to 200°F (95°C). In a skillet, heat 1 Tbsp. (15 mL) oil and cook tenderloin steaks to desired degree of doneness. Remove and keep warm in oven. In the same skillet, heat remaining oil and cook onion, ginger and hot pepper 2 min. Add diced fruit and cook another 2-3 min. Stir in white wine vinegar and sugar and cook 2 min. more until fruit is caramelized. Top tenderloin steaks with fruit sauce and sprinkle with coriander or parsley. Serve with orzo and fresh asparagus tips.

    peanut oil
  • 2 x 4-5 oz
    (2 x 120-150 g)
    beef tenderloin
  • 1/2
    red onion, chopped
  • 1-2 Tbsp.
    (15-30 mL)
    chopped ginger root
  • 2 Tbsp.
    (30 mL)
    chopped hot pepper (ex: jalapeño)
  • 3/4 cup
    (190 mL)
    diced fresh mango
  • 3/4 cup
