Blanch tomatoes and peaches in a pot filled with boiling water. Rinse them under cold running water and peel. Dice to 1/2 in. (1 cm).
In a thick bottom pot, place tomatoes, peaches, apples, pears, onions and celery. Wrap spices in cheese cloth and add to tomatoes along with vinegar and salt. Bring to a boil and simmer 1 hour.
Add sugar and continue cooking 15 to 20 minutes, stirring often with a wooden spoon.
Remove spices and pour into sterilized preserve jars.
