Place the dried white beans in a large bowl and cover with warm water. Let them soak for 4 hours. Make sure the beans are always covered with water while soaking. If needed, add some more water. Once the soaking time done, preheat the oven at 275°F. Drain the beans and place them in a cast iron pot. Add all other ingredients, except the water and season with salt and pepper to taste. Cover with cold water one inch above the top of the beans. Cook for 5 to 6 hours.
