In a bowl, mix sauce ingredients together, reserving half of the toasted coconut. Season with salt and pepper and keep cool. In a ridged skillet, heat oil over medium heat. Cook fish 4-5 minutes per side. Before serving, put a piece of mahi-mahi on each plate, top with sauce and sprinkle with reserved coconut.
