Preheat oven to 350°F/180°C.
Combine breadcrumbs, almonds, thyme and sage in a bowl. Season.
Put trout fillets in a lightly oiled ovenproof dish.
Cover trout fillets with seasoned breadcrumbs and sprinkle with lemon juice.
Bake uncovered 8 to 10 minutes at 350°F/180°C until flesh is no longer glossy.
