In a large bowl, combine all the filling ingredients except the beans. Adjust the seasoning, add the beans and toss gently. Place the tortillas on a work surface and divide the marbled cheddar slices evenly among them. Add an equal amount of filling to each. Roll up, cut in half on the diagonal and wrap.
