In a pan, on low heat, melt butter and cook garlic and leeks until soft, about 6 minutes.Add potatoes, carrots, broth, orange juice, ginger, coriander, salt and pepper. Bring toa boil. Reduce heat and let simmer until vegetables are soft, about 20 minutes. Add orange zest in last five minutes of cooking.Remove pan from heat and add milk. Purée in blender until smooth and creamy.Cool soup in the refrigerator until well chilled, about 4 hours.
