Mix the ingredients for the stuffing. Shape into a cylinder with your hands.Refrigerate at least one hour.Mix the eggs and canola oil. Set aside.Cut open the chicken breasts into two sections lengthwise.Place a cylinder of stuffing in each breast and close with a toothpick.Dredge the chicken breasts and remove the excess flour.Dip in the egg mixture, then in the breadcrumbs.Repeat the previous step. Refrigerate.Cook the chicken breasts on both sides in a skillet, until colored.Bake at 350°F (180°C) for 10 to 12 minutes.
