Preheat oven to 400°F (200°C).
In a large bowl, blend butter, sugar and vanilla.
Work flour into butter mixture until texture is grainy.
Add water and mix together, shaping dough into a ball.
Roll out the crust on a flour-dusted surface and line the bottom of a 9-in. (23-cm) springform pan. Set aside.
In a large bowl, combine cream cheese and sugar.
Add egg and vanilla, mixing until smooth and creamy. Stir in apples.
Pour into lined pan and sprinkle with almonds and cinnamon.
Bake 55 minutes. Cool before removing from pan.
