Combine 2 cups of crispy rice cereal with 1 cup of chopped pumpkin seeds. Add ½ cup of melted coconut oil and ¼ cup of maple syrup. Stir then press into the bottom of a pie dish.In a food processor, mix 1 package of silky tofu, 1 ½ cup of apple sauce, ½ cup of maple syrup, 3 teaspoons of ground chia seeds, 1 teaspoon of ground cinnamon, 1 teaspoon of ground cardamom, and 1 teaspoon of vanilla. Pour into the pie dish and chill in the fridge for one day before serving.Top with pumpkin seeds, apples, and a drizzle of maple syrup.
