Cut the apples into 40 1-in. (2.5-cm) cubes. Set aside in a bowl. Cut the pears into 20 1-in. (2.5-cm) cubes. Set aside with the apples. Cut the cheese into 1-in. (2.5-cm) cubes. Set aside.
