Preheat oven to 200°F (93°C).Core apples and remove stems.Using a mandolin, slice apples into very thin rings, the centre of which is the cored hole.Transfer the rings to a parchment paper-lined baking sheet.In a bowl, combine sugar and cinnamon and reserve half. Sprinkle on apple slices. Bake 2 hours.Turn slices over, sprinkle with remaining cinnamon sugar and bake for another 2 hours or until crisp.
