Brush pieces of chicken with butter, mustard, honey mixture. Set aside.
In a bowl, mix breadcrumbs, cheddar and spices together.
Roll chicken in breadcrumbs to coat and put on lightly oiled baking sheet.
Bake at 400°F/200°C for about 35-40 min. or until chicken is cooked through. Finish with a few minutes under the broiler for a crispy crust.
Serve with honey or barbecue sauce, home fries and steamed vegetables.
