Preheat oven to 425°F (220°C).In a large bowl, add lentils, corn, red pepper, cilantro, cheese blend, cream cheese, 1/2 of the spice packet and the full sauce packet from dinner kit; stir until well combined.Scoop about 1/4 cup (60 ml) of mixture onto a tortilla; roll from bottom up and set seam side down onto a parchment lined baking sheet. Repeat with remaining filling and tortillas.Spray taquitos lightly with oil spray and bake for 10 minutes.Meanwhile, in small bowl, combine sour cream with remaining half of spice packet.Serve hot taquitos drizzled with sour cream mix and topped with salsa, cilantro, red pepper and red onion.

Preparation
