Preheat oven to 350°F (180°C). Core apples three-quarters through. Pare top 2 in. (5 cm) or so to prevent splitting during cooking. In a bowl, combine brown sugar with butter and cinnamon. Stuff apples halfway up and add cranberries and raisins. Add remaining brown sugar mix. Top with nuts. Put stuffed apples in a buttered baking dish. Add ginger ale. Bake in the centre of the oven for 50 minutes or until apples are tender. Garnish with cinnamon sticks and serve with ice cream.

Preparation
