In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper. Simmer 30-45 minutes. Drain and set aside. Preheat the barbecue to medium ou oven "broil". In a glass bowl, combine all sauce ingredients. Place spare ribs on a sheet of oiled aluminium foil and brush with sauce. Cook 5 to 7 minutes on each side. Serve with tarragon rice.

Preparation
