In a saucepan, melt butter over medium heat and cook onion, stirring for 3 minutes or until softened. Sprinkle with flour and cook, stirring for 1 minute. Gradually stir in milk; bring to a simmer, stirring constantly. Simmer, stirring for 5 minutes or until thickened. Do not boil. Remove saucepan from heat; stir in cheese and salt into sauce. Stir until cheese is melted Meanwhile, in a large pot of boiling salted water, cook cauliflower for 5 minutes or until tender. Drain well. Pour over cauliflower to serve. Sprinkle with chives or red pepper flakes (if using).
