Preheat the oven at 210°C (425°F).
In a bowl, beat the eggs with the cream and nutmeg. Add the cheese and bacon. Pepper generously.
Place the bread slices on a pastry tray covered lined with parchment paper. Pour the cream mixture over the bread and let the liquid absorb for a few minutes.
Cook in the oven for 10 to 15 minutes. The bottom of the bread should be golden and the cheese melted. Serve hot or room temperature, with maple syrup.
