Preheat oven to 375°F (190°C).Slice potatoes 1/4 in. (6 mm) thick. Pat dry with paper towels and lay out on a baking sheet lined with parchment paper.Brush potatoes with olive oil and season with salt, pepper and herbes de Provence.Bake 15 minutes.Meanwhile, in a bowl, mix Cheddar, Parmesan, ham and green onions together. Preparation

Preheat oven to 375°F (190°C).
