Peel and pit longan.In a sieve over a bowl, press crumbled blue cheese with the back of a spoon.Blend the two cheeses together until smooth, adding cream as needed.Using a pastry bag with a small tip, pipe cheese mixture into longan.Place each stuffed longan on a leaf of baby spinach and refrigerate until time to serve them.
