Peel and pit longan.
In a sieve over a bowl, press crumbled blue cheese with the back of a spoon.
Blend the two cheeses together until smooth, adding cream as needed.
Using a pastry bag with a small tip, pipe cheese mixture into longan.
Place each stuffed longan on a leaf of baby spinach and refrigerate until time to serve them.
