Sauce: Combine butter and flour. Whisk in milk and cook over medium heat or in microwave on high, stirring frequently until thickened. Add parmesan cheese. Lasagne: Preheat oven to 350°F (180°C). In large frypan, heat oil . Stir-fry vegetables for 4 to 5 minutes or until tender-crisp. Set aside. In 12 inch x 8 inch (30 cm x 20 cm) baking dish, spread 1/3 sauce on bottom, top with 3 noodles, 1/2 cup (250mL) ricotta cheese, 1/3 vegetable mixture and 1/3 cup (80mL)mozzarella cheese. Repeat layers. Top with 3 remaining lasagne noodles, remaining sauce, vegetables and mozzarella. Cover and bake for 35 to 40 minutes. Wrap and chill leftover lasagne.

Preparation

Sauce:
