In a bowl, mix chicken, mango, salsa, coriander and onion together. Season.Cover 2 tortillas with mixture.In a skillet, heat a little oil and brown first tortilla 2-3 min. Add a third of the cheese and top with another tortilla. Turn.Cook another 2-3 min.Repeat for second quesadilla.Cut each quesadilla into 8 pieces.
