Preheat oven at 350°F (180°C).
In a large skillet, brown chicken in oil. Add salt and pepper. Set aside.
In the same pan, soften the carrots, onion and garlic. Add the tomatoes, wine and broth. Adjust seasoning accordingly.
Place chicken over vegetables and bake about 45 minutes until thoroughly cooked, with an internal temperature of 77° C/170° F.
Mix the gremolata ingredients and pour over chicken before serving.
