Preheat barbecue to medium-high.
In a blender or food processor, purée all sauce ingredients until smooth; set aside.
In a bowl, stir together chicken, breadcrumbs, eggs, chilli sauce, parsley, onion and cayenne. Shape into 4 patties, 1 inch (2.5 cm) thick.
Place a sheet of foil on barbecue grill and brush with oil. Grill patties on foil about for 5 to 10 minutes per side or until no longer pink inside and juices run clear.
Place a slice of bread on each of 4 plates, top with tomato slices and a chicken patty. Spoon sauce over top, sprinkle with spinach and cover with remaining slices of bread.
These light wines are characterised by their simple fruity aromas, the sensation of freshness they leave, and their unassuming structure. They must be consumed young.
