Preheat oven to 400°F/205°C and place a cookie sheet in it.
Butter 4 3/4-cup ramekins and sprinkle with sugar.
Melt chocolate with butter in a double boiler (or in microwave).
Beat egg yolks and sugar until light and fluffy.
Stir beaten egg yolks into melted chocolate.
Mix flour with cream and Amaretto.
Add flour mixture to egg yolk mixture.
Beat egg whites until stiff and stir 1/4 into egg yolk mixture.
Using a spatula, gently fold egg yolk mixture into egg white mixture.
Divide batter equally into 4 ramekins.
Place ramekins on the cookie sheet and bake 15 minutes. Do not open oven door.
Decorate with icing sugar just before serving.
