Preheat oven to 450°F/220°C.Rub Cornish hens with garlic. Sprinkle with thyme, oregano and basil. Season to taste with salt and pepper.In a thick-bottomed skillet, heat oil over medium-high heat and brown hens on all sides, about 10 min. Remove hens to a baking sheet and bake for 20 min.Brown shallots in 2 Tbsp. (30 mL) pan juices for 3 min.Deglaze with wine, add chicken bouillon, cranberries and maple syrup and bring to a boil. Simmer for 12 min. Salt and pepper.
