In a bowl, mix first 6 ingredients together. Salt and pepper. Refrigerate 30 min. Cut pears lengthways into 6 slices, avoiding the core (Note: Stand pears upright to cut them). Rub slices with lemon to prevent discolouration. Top slices with crab mixture. Garnish with chives.
