In a bowl, combine all the ingredients for the filling and refrigerate. Preheat a Panini grill.* Assemble the panini, dividing the filling, cheese, olives and peppers among the sandwiches. Grill until the panini are well marked and the cheese is melted, about 3 minutes. Cut in half before serving.
