In a large bowl, combine all the ingredients for the filling and adjust the seasoning. Refrigerate the mixture for at least 1 hour. Place one lettuce leaf and a quarter of the cheddar cheese slices in each pita pocket. Place the filling between the cheese and the lettuce to keep the pita from getting soggy. Wrap well and refrigerate.
