Preheat oven to broil. Cut apples and eggplant into thin slices. Heat oil and butter in a skillet. Brown slices. Season with salt and pepper. In an ovenproof dish, arrange slices in 4 stacks, alternating apple and eggplant layers and finishing with apple slices. Top with cheese and broil until cheese melts and begins to colour. Carefully transfer stacks to plates and serve immediately. Preparation
