Preheat oven to broil.Cut apples and eggplant into thin slices. Heat oil and butter in a skillet. Brown slices. Season with salt and pepper.In an ovenproof dish, arrange slices in 4 stacks, alternating apple and eggplant layers and finishing with apple slices.
