Preheat oven to 400°F / 200°C. Butter 9 in. (22 cm) pie plate. Combine sugar and cinnamon. Arrange apple quarters in a spiral in the bottom of the pie plate, sprinkle with lemon juice and sugar. In a bowl, mix eggs, milk and flour and pour over apples. Bake on the middle rack 35 minutes.
