Preheat the oven to 350°F.
In a pan on medium, heat the oil and butter. Cook the onion with the red bell pepper for 5 to 10 minutes.
Add the thyme and rosemary and combine.
Add the maple syrup and season with salt and pepper.
Cook for another 5 minutes. Set aside.
Line an oven-safe baking dish with parchment paper.
Slice the rolls in half. Add the bottom slice of the rolls on the parchment paper.
Top with half the shredded cheese and add the slices of roast beef.
Spread the caramelized onion mixture on top of the meat.
Top with the remaining bread slices.
Use a brush to spread the melted butter on the bread crust.
Sprinkle sesame seeds on top.
Bake in the oven for 20 minutes.
Serve the French Dip sandwiches with the dipping pizza sauce.
