Preheat the oven to 500°F (260°C). Line the bottom of a small deep roasting pan with the onions and carrots. Place the roast on the vegetables. Brush the meat with the Dijon mustard and sprinkle with the fines herbes. Roast for 15 minutes. Lower the oven temperature to 350°F (180°C). Surround the roast with the noodles. Pour the broth to cover the noodles. Roast for 20 minutes, checking regularly that there's enough liquid to cook the noodles. Remove the roast and noodles from the oven. Carve the roast and serve with the noodles and vegetables. </p>

Preparation
