Preheat oven to 450°F (230°C). In an ovenproof dish, put the roast Slip garlic slices and pieces of rosemary into incisions cut in the meat. In a bowl, mix pepper, salt, balsamic vinegar and Dijon mustard together. Brush meat with mixture. Brown 10 min. in the oven. Reduce oven temperature to 350°F (180°C). Add beef broth, cover and roast 2 hrs. or until meat thermometer registers 160°F (70°C). Serve with mashed potatoes and your favourite vegetables.
