In a bowl, combine all ricotta ingredients. Set aside. In another bowl, combine eggs, milk, cinnamon and salt. Set aside. Melt butter in a non-stick frying pan. Dunk bread slices in the egg mixture and place in the pan. Cook each side for about 3 minutes or until golden brown. Serve with ricotta mixture. Top with maple syrup and fresh fruit.

Preparation
