  • corn:

  • 4
    ears of corn, boiled

  • olive oil, for cooking

  • salt and pepper to taste
  • salad:

  • 1 1/2 cup
    (375 mL)
    cherry tomatoes, halved
  • 1 cup
    (250 mL)
    cucumber, diced
  • 1/4 cup
    (60 mL)
    red onion, finely chopped
  • 1/2 cup
    (125 mL)
    parsley, coarsely chopped
  • 1/4 cup
    (60 mL)
    basil, finely chopped
  • 1/4 cup
    (60 mL)
    mint, finely chopped
  • 1/4 cup
    (60 mL)
    olive oil

  • juice and zest of 1 lime
  • 6
    corn chips, coarsely crumbled (plain or cheese-flavoured)

Preparation
