Preparation

Add the butter and water to a pot and bring to a boil. Remove from the heat and add the flour mixture. Stir well and put back on the heat on low. Stir thoroughly until the mixture forms into a ball that comes away from the sides of the pot, just like when making choux pastry.

Remove the ball from the pot and place in a mixing bowl. Let cool down slightly. Add the eggs one by one. Add the baking powder and stir well. Add the cheese curds and stir well.

Heat and grease your waffle maker. Use two tablespoons of mixture to make each waffle. Heat until they turn golden or they might deflate. Repeat the process twice for a nice crust.

Crispy chicken :

Dip the chicken breasts in the eggs and then in the pork rinds and flour mixture. Repeat the process twice for a nice crust.
