In a deep fryer, heat oil to 375°F (190°C).
Pat smelts dry; dip in milk then dredge in flour, shaking off excess flour.
Drop smelts into deep fryer.
Fry 5 - 7 minutes or until golden brown. Drain on paper towels. Salt.
Transfer to a serving platter and garnish with lemon wedges and parsley.
