Coat the chicken cubes in cornstarch. In a bowl, mix together the eggs, flour, baking powder and salt, then add the chicken and coat well with the mixture.In a frying pan, heat the oil over high heat and add the chicken.Sauté the chicken, stirring often, for about 10 minutes or until it is golden brown on the outside and no longer pink on the inside.Remove the chicken from the heat and prepare your sauce.In a saucepan over medium-high heat, add the sesame oil, the ginger and the scallions, and cook for 3 minutes.Then add the water and maple syrup and let it simmer one more minute.While it simmers, in a small bowl quickly dissolve the cornstarch in the soy sauce and chilli sauce, then pour this mixture into the saucepan and cook for 2 more minutes or until the sauce thickens.Now add the chicken to the sauce.

Preparation
