In a large bowl, stir together flour, sugar, baking powder, salt and cinnamon. Add cheese and apple; stir well.In another bowl, beat eggs, milk, butter and vanilla. Add to dry ingredients and stir just until combined.Lightly grease a non-stick frying pan and heat over medium heat. Spoon in batter, 1/4 cup (50 mL) per pancake, and spread into 4 inch (10 cm) circles. Cook until bubbles form and underside is golden. Flip pancake and continue cooking other side until golden.
