Combine ground beef, egg, diced onion and garlic. Shape mixture into four patties and set aside. Fry pancetta in frying pan until crisp. Set aside. Mix cheeses in bowl. Pepper to taste. Brown sliced onion in olive oil over medium heat and add mushrooms. Set aside. Cook patties. Set aside. Salt and pepper to taste. Set aside. Toast hamburger buns. Spread Dijon mustard over one half. Top with one strip of pancetta, one cooked patty, one tomato slice, a few avocado slices and mushroom mixture. Spread cheese mixture over the other half of the bun. Serve.
