In the food processor, combine cream cheese and blue cheese. Add walnuts.
Cut pork into very thin slices.
Wash and quarter apple, then thinly slice quarters.
Spread cheese mixture on a slice of bread, and top with some sliced pork, mesclun and finally apple. Close the sandwich with a buttered slice of bread. The butter helps make it stay in place.
Preheat barbecue to medium or heat a little butter in a non-stick skillet.
Barbecue method: melt a little butter on a sheet of foil, and grill sandwiches on one side. Flip and continue cooking until cheese begins to melt slightly.
Skillet method: when butter is foamy, put sandwiches in. Lower heat to medium-low and grill until browned. Put some butter on ungrilled side, flip sandwiches and grill.
Cut in 2 and serve immediately.
