In a small bowl, whisk together the Greek yogurt, cream cheese and maple syrup.Set aside in the fridge until ready to serve.In a small bowl, combine the melted butter and vanilla extract.Reserve about half of the butter mixture and brush both sides of the peach slices with the remaining butter mixture.In another small bowl, combine brown sugar and cinnamon.Heat a large skillet over medium heat and add peach slices.Sprinkle with the brown sugar mixture.Cook 2-3 minutes on each side, until soft and slightly caramelized.Brush each toast with the remaining vanilla butter.Top with grilled peaches.Add a spoonful of maple cream on top and garnish with chopped pistachios.
