Slice fennel in juliennes.
Crush garlic and mix with vinegar, mustard, oil, pineapple juice, salt and pepper. Mix dressing with julienned fennel.
Cut ham and pineapple slices in chunks. Add to fennel with orange suprêmes and sliced olives.
Refrigerate and serve.
