In a large pot,bring broth and water to a boil. Add noodles and cook until soft.
Blanch Napa for 2-3 minutes. Cool quickly in cold water, drain, shred ans set aside.
Cut meat into very thin strips.
Stir tofu, ginger, lemon juice, green onion, coriander, blanched Napa and bean sprouts into broth and noodles. Season to taste.
Simmer 3-4 minutes.
