Slice the peel off of the orange and the lemon, avoiding the white pith. Put the peel in a large saucepan with the cinnamon sticks, spices and maple syrup. Add the apple juice, and bring to a gentle boil. Reduce heat to low and simmer for 20-30 minutes. Stir in the rum.
